The Codex Alimentarius – or ‘food code’ – is the collection of science-based international standards, guidelines, codes of practice (CoPs), and miscellaneous texts (collectively, ‘standards’) on food safety and quality adopted by the Codex Alimentarius Commission (CAC), with the statutory purpose of protecting consumer health and facilitating fair practices in the food trade. Known as ‘Codex’, this intergovernmental body is also responsible for promoting coordination of all food standards work undertaken by international governmental and non-governmental organizations to avoid duplication of work and contradictory standards that may negatively impact trade [1]. The compilation of Codex standards adopted by CAC is publicly available on the Codex website ( https://www.fao.org/fao-who-codexalimentarius/home/en/ ).
