Valorizing byproducts from broiler processing: biologics and sustainability

Balancing human nutrient needs and ensuring environmental sustainability continue to be a challenge (Ederer and Leroy, 2023). This also involves the agricultural sector. The concept of improving the sustainability of agricultural production has become a critical issue in the twenty-first century as environmental impacts have received more scrutiny. Food waste or loss can occur in many forms throughout the entire supply chain, including retail. Meat and animal products are one of the main contributors, accounting for 11 to 12% of food losses globally (Jones et al., 2021), and include those derived from the meat and poultry industry during processing. While various meat products for human consumption result from processing, a wide range of products not usable for human consumption are also generated (i.e. byproducts or waste) that require disposal. Depending on the nature of the byproduct, the type of disposal system can vary and in turn, have different environmental impacts, which can range from further processing to generate usable by-products for nonhuman foods to disposal of non-usable products directly into the environment.
