In poultry processing, official control comprises of (a) meat inspection and (b) food safety inspections (Fig. 1). Meat inspection comprises detailed regulated procedures aiming to ensure that the poultry meat is fit for human consumption as well as to promote animal health and welfare (EU, 2017). The purpose of food safety inspections is to verify that the food business operators (FBOs) comply with food safety legislation (EU, 2017; Codex 2013). To be able to perform official control, the authorities must have the right to enter all production areas and inspect all operations and documents related to the production (EU, 2017). This is a precondition for conducting reliable and effective inspections and this right should be stipulated in the legislation.
