The poultry industry is faced with combatting an ever-changing landscape of pathogens and antimicrobial resistance. The (re)-emergence of pathogens like Campylobacter jejuni, Campylobacter coli, Clostridium perfringens, Staphylococcus aureus, Listeria monocytogenes, and pathogenic serogroups of Escherichia coli continue to represent major public health concerns for the poultry industry. Each of these zoonotic pathogens has the potential to affect both poultry and human health through various direct and indirect transmission pathways (Abebe et al. 2020; Gomes et al. 2013). Salmonella and Campylobacter are the main contributors responsible for foodborne illness cases originating from poultry consumption. Campylobacter remains the largest contributor to all human gastroenteritis cases in the US (CDC 2022). However, in 2021, the USDA named reducing pre-harvest Salmonella in poultry a top priority. Thus, we focus here on non-typhoidal Salmonella.
