Local Gastronomy and the Role of Confraternities in Tourism Valorization. The Confraternity of Bucho Raiano in the Promotion of Inland Tourism

摘要

Gastronomic confraternities play an important role in the dissemination, promotion, and defense of agri-food products and the quality gastronomy of a particular region, maintaining the historical legacy of the customs of the respective peoples, regions, or areas, enhancing the value of the territories to increase the knowledge of tourism, to avoid the disappearance of traditions around their culture. The role of the confreres and their dynamics constitute the basis of the research, in understanding their contributions as elements for the preservation and enhancement of local gastronomy and culture. Bucho Raiano corresponds to a differentiated gastronomic product with a regional identity. It is a round-shaped sausage, made from the slaughter of the pig from pieces of pork meat that remained attached to the bones, head, tail, and ear, reflecting the need to take advantage of everything in the animal and store proteins for the winter period of greater need. This delicacy gains significance as a gastronomic product, leading to the creation of confraternities that seek to value, promote, and generate economic value for the product and the region of its origin. Thus, we seek to understand the importance of the confraternities in the enhancement of Bucho Raiano, the contributions of confreres in the promotion of this cultural heritage, and the specific traditions to inland gastronomic tourism.
