Outlining the Role of Vibrational Spectroscopy in Characterizing Starch

Vibrational spectroscopy plays a very vital role in the characterization of materials. It is one of the first pillars of spectroscopic tools that enable researchers to investigate the primary configuration of the object under investigation. Be it a monatomic, diatomic, or polyatomic molecule, vital rudimentary information can be accrued with the help of this. Starch is considered as one of the pivotal food elements of humans. Being complex in nature owing to the large constituent chains involved, the effective characterization of it is very important. In this regard, vibrational spectroscopy assays give structural information of starch to a large extent. Although all constituents cannot be assessed via vibrational spectroscopy; however, it helps to build a preliminary database which in turn enables investigators to implement more sophisticated analytical tools to deeply study therein. Accordingly, this chapter outlines the role of vibrational spectroscopy in characterizing starch. The scopes and challenges are also fairly dealt with herein.
