Physicochemical Properties of Citrus Fruits: Analytical Approach for Physicochemical Parameters of Citrus Fruit and Juice

Citrus fruits are widely recognized for their appealing sensory attributes, nutritional richness, and health-promoting compounds. This study presents a comprehensive exploration of both the physical and chemical aspects of these fruits, exploring parameters such as color properties, fruit weight, and firmness. Additionally, this chapter focuses on the chemical properties of Citrus fruits, particularly their abundant reservoirs of pectin and vitamin C. The discussion encompasses crucial components of their chemical composition; including pH and acidity, total soluble solids, sugar content, pectin, and vitamin C levels. Moreover, this paper highlights the utilization of both destructive and non-destructive techniques to assess these properties. The knowledge gained from this study can guide producers, processors, and consumers in making informed decisions regarding fruit selection, processing methods, and dietary choices that align with their desired nutritional benefits.
