Citrus flavours are the aroma and taste that are connected to citrus fruits such as oranges, grapefruits, lemons, mandarins and limes. Juices, candies, sweets and cocktails are just a few of the food and beverage products that frequently use citrus flavours. They are renowned for bringing a burst of freshness to foods and beverages with their acidic, zesty and light flavours. Citrus flavours contain more than 200 different components. Citrus fruit flavour is essentially a synthesis of the native taste, aromas and textural characters. Citrus flavours are extracted from citrus fruits by various production practices. The elucidation of various genes participating in the biosynthesis of flavour components is possible due to the recent research in citrus genomics. This chapter provides an overview of citrus flavors, encompassing their sources, composition, sensory characteristics, and applications.
