Potato Peel Enrichment in Functional Food and Feed

The potato is the fourth most common crop cultivated globally every year. Potato peel is the major waste released by potato-processing industries and poses a global environmental threat. Potato peel contains beneficial nutritional rich organic and bioactive compounds that can be used in a variety of ways. Aside from serving as a natural antioxidant in food, phenolic compounds found in potato peel can be specifically beneficial in chronic disease treatment. Increased demand for food products based on animals has had a direct impact on feed supply and price. This has sparked the interest of researchers in the potential of low-cost, less competitive, and locally available material as feed ingredients. Therefore, the current chapter discusses the health-promoting and nutritional value of potato peel. Furthermore, a thorough discussion of the food and feed industries’ current knowledge of this bio-residue.
