Industrial Demand and Applications of Capsaicin
摘要
Capsaicin occurs naturally in hot pepper (Capsicum annuum) fruits normally known as chillies. It has been utilised since antiquity as a food vegetable, natural colourant, flavouring component, and conventional medicine. The genus Capsicum (Cap) is an extensively suitable plant for cultivation as it is widely consumed in the world. Because of their broad diversity, peppers are an important vegetable and spice crop, and the products of which contain various bioactive chemical constituents, including capsinoids, capsaicinoids, carotenoids, and oleoresin. Growing attention has been paid to the physiologically active chemical components of pepper due to the ecologically friendly plant products. Red pepper has important commercial uses in the cosmetic, pharmaceutical, and agro-food industries. Chilli contains remarkable levels of bioactive chemical constituents, including capsaicinoids, carotenoids, vitamins, and minerals; its pigments include lutein, chlorophyll, anthocyanin, etc. Capsaicin accounts for the strong or pervasive or irritating flavour of these families. These species have been demonstrated to perform a constructive responsibility in well-being. Furthermore, capsaicin is utilised in sauces to provide sharpness, flavour, and colour; other chemical constituents of peppers can be utilised for the conservation and expansion of commercial products’ life expectancy and used for their antioxidant, anticancer, anti-obesity, urinary disorders, and antimicrobial activities. The utilisation of advanced compounds derived from chilli in medicinal procedures for the therapy of erythrogenic as well as torment-associated situation is also likely, because peppers consist of vitamin A and vitamin C, carotenoids, capsaicinoids, phenolic compounds, and minerals, for example, calcium (Ca) and iron (Fe), possessing a well-being potentiality. Furthermore, investigations on significant extricate procedures, bioactivity, reliability as well as security are important to determine modern pepper chemical constituents within food stuffs, non-medicinal or cosmetic, and pharmaceutical applications. This chapter covers the importance of industrial demand and uses of capsaicin in the agro-food, pharma, as well as cosmetic industries.
