摘要

The increasing demand for alternative proteins, driven by population growth, urbanization, and the growing popularity of vegetarian and vegan lifestyles, presents new challenges in ensuring future food security. This is further worsened by the expected intensification of pressure on land, resulting in negative consequences for greenhouse gas emissions, biodiversity, and other important ecosystem services. Extraction of protein from biomass residues appears to be one promising way to address this issue, particularly within the context of a bio-based circular economy that aims to maximize the value of derivatives obtained from biomass residues, using a cascade approach. Therefore, several extraction methods have been investigated for this purpose, each with its own advantages and limitations. However, the successful commercialization of proteins obtained from agro-industrial waste faces significant hurdles, including regulatory considerations, scalability of technologies, consumer acceptance, and the establishment of robust value chains. Despite these challenges, the market for alternative proteins holds promising opportunities. There is a growing consumer demand for healthy dietary options, with a diverse range of market niches. Recognizing these opportunities, this book chapter provides a comprehensive and up-to-date overview of the scientific, technological, and commercial aspects of protein extraction from biomass residues. It offers valuable insights and guidance for future research and development in this expanding field.
