Pullulan-Based Films

The selection of technologies created and utilized in commercial products is strongly affected by societal and industrial requirements for lower carbon footprint, economic viability, and better performances. Food packaging, along with many other areas, is adopting novel technologies. Biopolymers are among the most promising approaches to maximizing the usage of existing packaging materials while still achieving the goal of prolonging shelf life and maintaining quality. Because of its distinctive attributes, pullulan is receiving a lot of attention among other food packaging materials. The purpose of this chapter is to give an overview of the production, properties, and applications of pullulan in the packaging industry. Current limitations, potential challenges, and ideas for resolving the issues and improving the usage of pullulan as biofilm are also discussed.
