Experimental and Theoretical Study of Solar Drying of Red Pepper in a Mixed Solar Dryer

The present work is an experimental study of the red pepper solar drying process using a mixed solar dryer. The obtained experimental results were used to determine the drying characteristics curves. Fourier series were used to solve the diffusivity equation. In addition, the effective diffusion coefficient was calculated using the linear fit and slopes from 2 measurement points. The duration of the drying operation for a final product is 48 h. The effective diffusivity obtained values are 2.09E−09 and 2.10E−09 m2/s, activation energy obtained value is 53.78E4 J/mole.
