Fruits and Vegetables as a Source of Nutraceuticals: Twenty-First Century Perspective

The emergence of nutraceuticals brought about tremendous changes in medicine and human nutrition. Nutraceuticals are gradually gaining ground in recent times, as they are not only a great source of nutrients but also an amazing source of health promotion and disease prevention. In this chapter of the book, we provide an insight into how vegetables and fruits are a reliable source of nutraceuticals. We aim to delve much into their diversity, action mechanisms, and importance. We begin the chapter by defining nutraceuticals and their necessity in the healthcare industry. For vegetables and fruits, we bring forth the presence of vitamins, minerals and phytochemicals, and the role they play in human health. Primarily, we are much more interested in nutraceutical diets and their role in human health such as heart health. Specifically, we looked at berries, tropical varieties, and vegetables including cruciferous vegetables and leafy greens. We also looked at extraction methods, regulations and regulatory bodies and ended up with discussions on research opportunities for novel compound discovery and advancement in nutrition.
