Production of Microbial Enzymes

Microorganisms have been used for the production of bread, wine, vinegar, and many other products since time immemorial. The use of microbial enzymes in industries and medicines has been very useful and is very cost-effective. Enzymes can be produced easily from microbes and their stability is very high. These enzymes have been permitted by the FDA to be used in food, agriculture, and industries. The microbial enzymes have catalytic properties. The microbial industrial processes that utilize these enzymes do not produce much pollution. This makes them environment friendly. Microbial enzymes have been used in food, feed, pharmaceutical, and biotechnological industries. With recent developments, genetically recombinant enzymes from bacteria and fungi have also been produced. These have shown success in many bioprocesses. This chapter discusses the production of microbial enzymes and also their production by genetic manipulation. With this, the yields of bio product can be increased many folds. This chapter gives an overview on the production of industrially important microbial enzymes, their applications, and means to increase their yields.
