In recent years, the global market for natural pigments has experienced rapid growth, driven by increasing consumer consciousness of health and the invention of new therapeutic effects associated with many natural pigments, such as carotenoids, flavonoids, and curcuminoids. However, conventional production methods are often limited by their dependence on specific sources, climatic conditions and tend to yield low concentrations of target pigment compounds. To address this challenge and boost industrial production, significant efforts have been directed towards sustainable technology. In this regard plant cell, tissue and organ culture played a significant role and offer a wide array of techniques for stable and season independent production of colors and pigments. This chapter provides an overview of the necessity for in vitro production of colors, detailing methods, and strategies for optimizing callus and cell suspension cultures. Additionally, it explores the initiation and establishment of organ cultures, alongside the factors influencing pigment production through this method. Furthermore, the chapter explores into the challenges, constraints, and outlook of the field, emphasizing the requirement for continued advancements in metabolic engineering and scale-up processes to fully harness the potential of natural pigment production.
