Online Quality Control of Horticultural Crops During Processing

Size, color, form, texture, and defect are among the main qualities of horticultural products. Since a computer vision system produces precise, unbiased, and noninvasive results, it is utilized to assess processed food instead of a human inspector. Computer vision, HIS, MSI, infrared technology, ultrasound, tomographic imaging, MRI, CT, X-ray (CT), Raman spectroscopy, NMR, and VOCs e-sensing have all been used by the horticultural and food processing industries to monitor quality online. The detailed examination of these most recent breakthroughs is provided in this chapter on machine vision systems. Because they can produce quick, effective, hygienic, reliable, and unbiased results, machine vision systems are widely employed in industry for inspection and evaluation. However, it can be inferred from the thorough survey carried out in this chapter that there is still a need for the development of robust online controlling methods with improved capabilities despite the fact that numerous approaches have been put forth by researchers for the evaluation of the quality of fruits and processed goods.
