In this work, the power consumption and ensure the moisture content of dried avocado slices were minimized by response surface method based on drying technology of heat pump. Experiments were conducted to determine the ability consume electrical energy when reaching the moisture content of dried avocado slices. The obtained data was also used to construct an objective function describing the influence of temperature and drying speed of the drying agent on the drying process. The results of the analysis of variance also confirmed the influence of drying conditions on the power consumption and the moisture content of dried avocado slices. Optimal results were obtained the power consumption and the moisture content of dried avocado slices was 4.8 kW and 6.2%, respectively, when drying with temperature and drying speed of 46.03 °C and 1.15 m/s, respectively.
