Parsa’s—Food for All: Franchising Operations and Maintaining Food Authenticity in Food Businesses of India

Parsa's is a Kashmiri fast-food chain, doing business as ‘Parsa's - Food For All’ and headquartered in Srinagar, Jammu and Kashmir. This case study includes interviews with key stakeholders from Parsa's and its outlets, providing detailed insights into their operational practices and challenges. The rapid growth of franchising in the food industry has resulted in a diverse landscape of regional food outlets in India. This study aims to investigate the operational dynamics of regional food franchising outlets through the ‘business-format franchise model and Franchise Operated Company Model (FOCO model)’, with Parsa's serving as a representation for the case study. The study's objectives include identifying the challenges these outlets face in maintaining the authenticity of their food offerings while adhering to standardized operations. Regional cuisines often require specific ingredients, preparation techniques, and cultural nuances, making authenticity complex. High-quality ingredient sourcing, recipe replication, and maintaining the essence of the cuisine while standardizing operations are significant challenges these restaurants face. Therefore, this case study allows students to examine the operations of regional food franchising outlets in India, with Parsa's serving as a reference. The study also enables students to analyze the unique challenges faced by regional food outlets like Parsa's in maintaining the authenticity of their culinary offerings.
