Remedial Approaches to Arrest Arsenic in Soil–Plant System to Prevent Its Entry in Rice Grain—a Review

Arsenic (As) contamination has been a world-wide issue since decades which has become a serious problem to the population living both in As-endemic and non-endemic regions. The metalloid, As, has made its way to humans through the inescapable food chain via consumption of As-contaminated food (plants and animals), food products and water. Rice being a staple diet for a large population in the South Asian sub-continent constitutes a significant source of As to the human body due to its efficient As accumulation property. The health risks posed by As in rice are of critical concern, necessitating remedial measures to prevent the entry of As from contaminated soil to plants. This chapter encompasses the different strategies used to reduce or prevent As uptake, translocation and bioavailability by rice crops, highlighting existing research gaps and future research prospects in this field.
