For decades, disease-modifying therapy has been the central approach in managing multiple sclerosis (MS), focusing on restoring motor function, preventing disease relapse, and maintaining remission. However, MS patients continue to require ways to optimize their lifestyle and diet to cope with the accompanying fatigue and psychological comorbidities. This chapter investigates the multifaceted impact of dietary interventions, particularly emphasizing the role of whole grains and fibers in managing MS. Exploring evidence from experimental models, the chapter explores the potential of fibers like guar gum and cellulose in ameliorating MS symptoms. Emphasis is placed on the modulation of gut microbiota and inflammatory markers, offering insights into the broader health benefits of whole grains, including cognitive function improvement and reduced risks of various diseases.
