Introduction to Multiple Sclerosis

Multiple sclerosis (MS) is a chronic demyelinating central nervous system disease caused by acquired autoimmune inflammation, demyelination, and axonal degeneration. It is primarily a disease of young adults. Various genetic and environmental factors have been identified as possible contributors to the disease pathogenesis, diet being a key factor. We hypothesize that diet can serve as a preventive and therapeutic target for patients with MS. This book is dedicated to collect the available evidence that establishes a relationship between diet and MS, thus exploring dietary interventions as a potential avenue for the prevention and treatment of the disease that is accessible across various cultural and socioeconomic backgrounds.
