The long-standing practice of employing enzymes from microorganisms in food preparation has evolved alongside technological progress. Bacteria and fungi, along with their enzymes, considerably improve the taste and texture of various food products, providing substantial economic benefits to industries. Microbial enzymes, distinguished by numerous benefits such as ease of production parameters and cost-effectiveness, outshine their plant- or animal-derived counterparts. Microbial enzymes, known for their robustness and stability, excel in comparison to their plant and animal counterparts, gaining supremacy across various sectors in industrial bioprocesses.
