The baking industry’s enduring relationship with microbes and the integration of biotechnological advancements have transformed the production of bakery products. The symbiotic interaction between microbes and baking has been instrumental in creating a vast range of bakery products throughout history. This chapter delves into the historical and contemporary importance of both microbes and biotechnology in various baking processes, demonstrating their role in modern bakery product applications. The discovery of yeast leavening in ancient Egypt revolutionized bread-making and led to the development of various bread types with distinct flavors and textures. Modern times have integrated Biotechnological techniques into the baking industry, leading to innovative techniques and applications. Biotechnological advancements have led to the development of genetically engineered, yeast and bacteria which have enhanced their fermentation capabilities, resulting in improved leavening, texture, and flavor development. Biotechnological techniques have facilitated the use of enzymes in baking, enabling precise control over dough conditioning and product quality. The integration of probiotics and prebiotics through biotechnology has resulted in the production of healthy baked goods. The combined impact of microbes and biotechnology in the baking industry has transformed the production of bakery products, enhancing their quality, diversity, and sustainability.
