Bio-nutritional Constituents of Coconut

摘要

The coconut (Cocos nucifera L.) palm, belonging to the Arecaceae family, is known for its multi-fold utilities among other fruits. Coconut products are highly recognized in various culinary and nutritional applications due to their rich nutritive metabolites, and distinct flavors. For instance, the tender coconut water is a nutritive-rich, and refreshing beverage packed with minerals and other beneficial compounds. The mature coconut kernel, abundant in fat and protein, offers coconut milk, serving as a key ingredient in virgin coconut oil (VCO) extraction. The brown coloured mesocarp of coconut fruit, commonly called testa, is rich in polyphenols and flavonoids of nutritional significance offering yet another possibility of utilizing it in the extraction of testa oils and production of nutraceuticals. Elite variants of coconut kernel such as Makapuno’ (or macapuno)- or ‘kopyor’ and aromatic counterparts offer significant advantages for value addition processes. In addition, the expansion of coconut milk as a vegan alternative for dairy milk in the utilization in the food and beverage sectors holds a considerable market potential. Additionally, coconut’s by-product, coconut flour, packed with high protein and dietary fiber content, presents opportunities for the development of functional foods. The phloem sap or coconut inflorescence sap or neera is another major offering of coconut palm with a potential for nutrition rich products such as neera-based beverage, mineral rich sugar and second line of value added products. This chapter discusses bionutritional constituents of coconut and its derivates in light of our improved understanding of human nutrition.
