Coconut Biomolecules-Future Perspectives

Coconut, being a versatile crop, offers numerous opportunities for value-added products utilizing various parts of the plant. Although coconut products have been used as food since time immemorial, they have achieved greater significance in the realm of nutraceuticals or nutrition-driven value addition only in recent decades. Biochemical characterization of coconut and its products has mainly concentrated on macromolecules like fatty acids, proteins, and fiber fractions. However, considering its nutraceutical potential, various bioactives of coconut have been unearthed, and clinical trials are underway. In this context, this chapter presents the future perspectives of coconut-derived biomolecules with special emphasis on human nutrition.
