Over the years, the poultry and other meat industries have undergone considerable changes, including the introduction of specialized meat breeds that grow faster and the trend towards selling cut-up and processed products. Improvements in genetics, nutrition, medicine, and engineering at the farm and processing plant levels have enabled these transformations. Poultry processing involves stages such as slaughtering, defeathering, evisceration, chilling, portioning, and packaging. These steps ensure meat quality and remove contaminants. Meat processing includes activities such as stunning, bleeding, dressing, evisceration, chilling, cutting, and packaging, improving flavor, shelf life, and appearance. Poultry and meat processing require strict adherence to hygiene and safety standards for preventing pathogen spread and ensuring food safety. Automation and uniformity are needed, requiring input from breeders, farmers, and processing plants. Technological advances have improved efficiency and precision, increasing production capacity and product consistency. The demand for processed poultry and meat has grown due to changing consumer preferences and convenience in food preparation. Concerns about environmental impact, animal welfare, and additives have led the industry to explore sustainable and ethical practices.
