Fermented Foods and Their Potential

Foods that have gone through fermentation have been consumed by humans for generations and hold cultural importance in various cultural societies. This review of literature delves into the advantages, for our health the nutritional value and the potential impact of fermented foods, in minimizing food wastage. Fermented foods are a diverse group of foods that have undergone a process of microbial fermentation, resulting in a range of flavours, textures and nutritional benefits. The review emphasizes the importance of bacteria found in fermented foods, like lactic acid bacteria, bifidobacteria and yeast, which can improve gut health, aid in digestion and potentially provide other health benefits such as immune system regulation, weight management, anti-cancer and anti-diabetic effects. Foods that have fermentation are known to contain a variety of nutrients such, as vitamins, minerals and amino acids. In fact, they often have more content compared to foods that have not been fermented. The review further explores the potential of fermented foods to reduce food waste by extending the shelf life of foods and utilizing excess produce that would otherwise go to waste. Finally, the review identifies gaps in knowledge and potential areas for future research, highlighting the potential for fermented foods to address current public health and sustainability challenges.
