The pseudocereal, Buckwheat in scientific Fagopyrum species, is a dicotyledon, currently whopping great possibilities in the health food sector relevantly due to superior nutrition quality. It has valuable inception of oxybenzene compounds, phytosterols, fluorescent phototoxic fagopyrins, and roughage as fiber, lignans, vitamins, minerals, antioxidants, and unsaturated fatty acids in different plant parts. The biological value and productive properties of buckwheat lead to the development of healthy food products. The value-addition in the product of Fagopyrum will be enhanced by the incorporation of other compounds to it; in the case of buckwheat, there are numerous extruded products such as bread, biscuits, muffins, polenta, beer, sprouts, noodles, groats, pancake mix, confectioneries, cookies, soups, spirits, porridge, and other confectionery products. It contains an eclectic extent of bioactive compounds, such as polyphenolic flavones, triterpenoids, phenylpropanic acid, glycosides, phenols, polysaccharides, and bioactive peptides, as well as diastereomers of inositol and its derivatives. Some naturally occurring bioactive peptides found in seeds of buckwheat are multiple functional compounds that, in some cases, act as anti-nutritional factors, such as peptides having anti-microbial, hypotensive, and antioxidant activity, as well as trypsin inhibitors and anti-tumor proteins. The biological value of buckwheat proteins is considerably 100, possessing a significant amount of amino acids, and several tests revealed that it is more affluent in lysine, histidine, and tryptophan. The gluten-free proteins of buckwheat help to relieve people with celiac diseases. However, the RDA value or recommended intake of this grain is minimum (40 g/day) due to protein content present in buckwheat which also responsible for the allergic reaction. The occurrence rate of allergy with buckwheat is significantly (p < 0.05) lower than that related to the consumption of gluten-containing foods. It has been accepted as a functional or healthy food; therefore, it is suggested to improve human health and be used in treating diseases.
