摘要

Barley grains stand as the fourth most significant grain crop around the globe, and it is widely used for the food manufacturing, animal husbandry, and brewing sectors. Barley’s distinctive good chemical composition and associated health advantages have attracted growing interest from agricultural and food scientists. It contains a wide range of bioactive phytochemicals with promising potential for promoting health. However, the complete scope of its beneficial nutritional properties remains insufficiently investigated due to its limited use in different types of food products. Thus, there is a need within the food processing industry to innovate and develop distinct, nutritious food items incorporating barley that cater to consumer preferences. It has attracted more attention as a potentially beneficial dietary choice for individuals. It is an excellent source of dietary fiber, especially the kind of functional foods that are noticeably enhanced with beta-glucan, a beneficial component that has several health benefits. Apart from these, highland barley showed unique properties including anti-inflammatory, anticancer, antidiabetic, antibacterial, and anti-obesity qualities, in addition to controlling hyperglycemia and hyperlipidemia. The chapter emphasizes the significant potential of barley to be used as a nutritious and useful food, and it may be instructive for improving how barley is used in food processing.
