Physicochemical Methods of Food Preservation to Ensure Food Safety and Quality

The preservation of food through physicochemical methods is vital for ensuring food safety, extending shelf life, and maintaining product quality. This chapter seeks to highlight various physicochemical methods of food preservation aimed at ensuring food safety and quality. It provides a comprehensive overview of various techniques and discusses their relevance in preventing spoilage and ensuring consumer health. The physical indicators of food spoilage include discoloration, textural changes like softening, rubberiness, and grittiness as well as odors, mold growth, gas production, and physical damage due to bruising, crushing, abrasion, slicing, and post-harvest impacts. Food discoloration may result from enzymatic browning, oxidation and other chemical reactions, and microbial growth and lead to food browning, greening, yellowing, blackening, and reding. Some food preservation methods discussed in the chapter include drying, smoking, pickling, canning, salting, freezing, fermentation, pasteurization, irradiation, and thermal sterilization as well as some advanced food processing techniques like high-pressure food processing, freeze drying, pulse electric field, freeze drying, and vacuum packaging. Properly preserved foods have an extended shelf life, reducing food waste and ensuring a consistent supply of safe and nutritious products to consumers. Consumers increasingly seek minimally processed foods with clean labels and natural ingredients. Therefore, preservation methods that preserve sensory attributes, minimize additives, and reduce environmental impact are favored. Overall, this chapter serves as a valuable resource for researchers, food manufacturers, and policymakers seeking to enhance food safety and quality through the application of physicochemical preservation methods.
