Significance of Various Aspects of Food Microbiology, Fermentation, and Latest Technology and Its Impact on Human Health

Microbiology is important for food safety, production, processing, storage, and preservation. People have used yeast, mold, and bacteria for centuries to make foods like bread, beer, wine, vinegar, yogurt, and cheese, as well as fish, meat, and vegetables because they have always had fermentation bacteria. Fermentation process: Fermenting microorganisms contribute to food stability through physical and biochemical changes in fermented foods. These fermented foods are more beneficial to consumers than simple foods such as antioxidants, peptide formation, and probiotic products and also contain antioxidants, antibiotics, drugs, antibacterial, anti-inflammatory, anti-diabetic, and anti-atherosclerotic activity. It is known that fermentation technology can produce many important products, including antibiotics, solvents such as ethanol, intermediates such as citric acid, and probiotics such as yogurt. Currently, the food and pharmaceutical industry is using the concept of integrated technology to achieve new equipment such as ultrasound, ohmic heating, medium electric field, pulsed electric field, and high efficiency of the whole fermentation. Procedure: Fermented foods provide our foods with nutrients, some of which are produced by the action of bacteria during fermentation. These products may contain different types of microbiota that can affect the physical and chemical properties of food and human health. This review highlights the importance of various aspects of food microbiology and fermentation and their impact on human health, rather than new fermentations.
