Cooking Techniques to Protect Nutrient Loss of Indigenous Small Fishes

Indigenous small fishes have long been an essential component of the human diet in many parts of the world. They are a rich source of essential nutrients and contribute to food security and livelihoods, especially in regions where larger fish are less accessible. These small fishes are nutritionally dense, providing essential micronutrients such as vitamins, minerals, and omega-3 fatty acids. However, the nutritional value of these fishes can be significantly compromised during cooking due to several factors such as temperature, cooking method, and exposure to air. Various techniques can be employed to minimize nutrient loss during cooking, each with its scientific rationale. Steaming, microwaving, sous-vide cooking, marination, and baking all offer benefits in terms of nutrient preservation. Understanding the scientific principles behind these methods can assist in making informed choices to maintain the nutritional value of indigenous small fishes in our diets. Further research and development on these techniques can promote better utilization of these valuable resources while ensuring food security and improved public health. This chapter explores the importance of ISFs in human nutrition.
