Electronic Nose and Its Applications

Electronic nose has garnered great interest in the field of sensor technology, partly due to the discovery of multiple applications generated from research in several applied sciences over the last two decades. Recent uses of electronic nose technologies have resulted from developments in sensor design, material advancements, software advancements, and microcircuit design and systems integration. While the idea of an electronic nose has existed for around 20 years, a functional gadget has just lately hit the market. The lengthy delay between concept and product is due to the system's complexity. An electronic nose (e-nose) sensor array reacts to air pollution by leaving a “fingerprint” that might be linked to a particular odor. A computer system, a detecting system, and a sample delivery system make up its primary parts. The electronic nose should, in principle, only be made up of sensors, electronic driving and detecting circuits, and software for sensor processing. The employment of electronic noses has substantially helped a number of commercial enterprises, including those in the agricultural, biomedical, cosmetics, environmental, food, manufacturing, military, pharmaceutical, regulatory, and various scientific research areas. Products today have greater qualities, homogeneity, and consistency as a result of advancements in quality control capabilities made possible by electronic nose monitoring of all phases of industrial production processes. It is responsible for the automated detection and categorization of gases, smells, and vapors. Systems for the automatic detection and classification of scents, vapors, and gases are being developed using electronic/artificial noses. A chemical sensing system (e.g., sensor array or spectrometer) and a pattern recognition system are typically used in an electronic nose (e.g., artificial neural network). This chapter provides an overview of the most significant application of electronic nose technology in food and beverage industry, as well as a summary of some of the most essential and beneficial uses of this technology.
