Polysaccharides

The functional properties of polysaccharides, such as hydrogels of agarose and alginic acid, biocompatibility of hyaluronan, and amphiphilic properties of Gum Arabic, have been received considered attention. At the same time, gelling properties of agarose, alginic acid and pectin have been utilized for a long time in everyday life. In this section, representative polysaccharides showing unique functions will be described.
