Rice, Wheat, and Sugar

Rice, wheat, and sugar are major sources of carbohydrates that human beings require. Three plants have been produced based on the heavy labour of farmers for a long time. Rice and wheat are in general utilized as staple foods; at the same time by-products are used in a wide range according to the long history of cultivation. Sugar has been a political plant for a long time, reflecting its complex geographical conditions. In this chapter, the historical and geographical background of rice, wheat, and sugar will be described. At the same time, the utilization of the above carbohydrates as a source of fermentation will be mentioned.
