Legume Seed: A Useful Platform for the Production of Medical Proteins/Peptides

Legumes are one of the most valuable food crops and nutritious staples of many cultures around the world. They are an economical source of high-quality protein, complex carbohydrates, vitamins, and fiber, as well as health-promoting bioactive compounds and proteins/peptides. Here, we present an overview of legume seed storage proteins, their macromolecular structures, mechanisms of transport, accumulation, and compositions, as well as examples of using traditional breeding to improve legumes and modern genetic engineering to produce recombinant proteins/peptides, making the legume seed an excellent platform for molecular farming.
