History and Dietary Cultures of Indigenous Fermented Foods and Beverages

Globally, fermented foods and beverages form an integral part of the cultural heritage that has evolved throughout human civilization. While ancient food preservation techniques are popular for extending the shelf life, fermentation also enhances organoleptic characteristics and imparts nutritional benefits, including improved digestion and enhanced immunity. Historical evidence for fermented foods exists across civilizations such as the Indus Valley, Harappan, Egyptians, Greeks, and Romans, and it continues to be a sustainable and nutritious food. The scientific interventions and increasing consumer awareness have matured the health-beneficial concepts of microbial fermented foods and explored the challenges in natural fermentation products. With the advent of modern biological techniques such as microbial functional genomics, predictive microbiology, metagenomics, precision fermentation, and bioengineering, more fermented foods with improved flavor and functionality are continuously developed. This chapter deals with the historical relevance, geographical diversity, safety issues, and importance of upholding traditional customs and emphasizing their enduring significance in contemporary diets and societies.
