Fermentation originally evolved as a preservation technique, particularly valuable during times of scarcity, to prevent food spoilage. It remains one of the oldest and most cost-effective methods of food production and preservation. Beyond its role in preservation, fermentation enhances flavour, increases digestibility and improves the nutritional and pharmacological qualities of foods. Lactic acid bacteria (LAB) are vital in producing and preserving safe, wholesome fermented foods. Due to its susceptibility to microbial spoilage, meat undergoes essential processes like drying, smoking and fermentation in traditional preparations. LAB exhibits inhibitory effects against spoilage organisms such as Klebsiella pneumoniae, a common contaminant in stored meat. These bacteria thrive in anaerobic, salty conditions by producing lactic acid, which lowers pH, creating the tangy flavour distinctive of sausages. LAB also releases trace amounts of compounds like acetic acid and ethanol, adding to flavour complexity. Fermented products can improve nutrient bioavailability and serve as a source of probiotics. This review emphasizes the importance of these traditional foods in today’s diets, preserving cultural heritage while offering nutritional and therapeutic benefits as functional foods.
