Although not commonly used in home cooking, increased awareness of its nutritional benefits has led to growing linseed consumption to address lifestyle-related health issues. Linseed stands out for its high omega-3 fatty acids, particularly alpha-linolenic acid, which support heart health. It is also rich in dietary fiber, aiding digestion and lignans with antioxidant properties. Linseed provides complete protein and essential vitamins and minerals such as magnesium, phosphorus, and copper. Linseed can be incorporated into various foods, including ground seeds, oil, capsules, milk, and gum. The chapter explores numerous food applications of linseed, including baked goods, cereals, snacks, dairy alternatives, dressings, and functional foods. Including linseed in food products enhances nutritional value and aligns with developing health-promoting sustainable foods.
