Aging is a continuous process of loss of physiological integrity and functional impairment that leads to death. The aging process often leads to various disease conditions affecting the digestive, immune, musculoskeletal, cardiovascular, and central nervous systems. Recent research indicates that various dietary approaches can reduce cell-damaging processes such as inflammation, oxidative stress, redox changes, and metabolic stress, which rejuvenate cellular aging. Some specific dietary practices, such as the Mediterranean-style diet, Okinawa diet, ketogenic diet, dietary approaches to stop hypertension (DASH) diet, Baltic Sea diet, and caloric restriction, are beneficial to the healthy living of the aged population. The proper balance of protein, vitamins, fibers, and good fats in food through these dietary plans has been shown to protect physical function, bone and muscle health, cognitive activities, and chronic disease states during aging. The chapter describes the role of nutritional components in managing aging and aging-related disorders.
