In 1809, Appert published a book titled “L’Art de Conserver Les Substances Alimentaires” (The Art of Preserving Animal and Vegetable Substances), in which he described a method of preserving food by sealing it in glass jars and heating it. His method was based on the principle that heating food in a sealed container would prevent spoilage by killing microorganisms. Appert’s work was spurred by the French government’s call for innovative methods to preserve food for military and naval purposes during the Napoleonic Wars. His successful experiments with glass jars eventually led to the widespread adoption of his technique, laying the foundation for modern canning. While Appert’s glass jars were a significant advancement, they were not ideal for all types of food and were prone to breakage. The next major innovation in canning came with the development of metal cans. In 1810, Englishman Peter Durand patented the use of tin cans for food preservation. Durand’s invention was further refined by other inventors, including John Hall and Bryan Donkin, who improved the canning process and the design of the cans. Durand’s metal cans were initially used primarily by the British military and navy. They proved to be more durable and practical for transport compared to glass jars. However, the early cans were difficult to open and required a can opener, which was not widely available until the late nineteenth century. In 1813, Doukin, Hall, and Gamble introduced the practice of postprocessing incubation for canned foods. In 1825, Kensett and Duggett were granted a U.S. patent for preserving food in cans. The same year, Thomas Kenett developed the first kettle pan. In 1837, Winshow became the first to can corn directly from the cob. By 1839, tin cans were widely used in a limited number of states. In 1845, Elliott introduced canning to Australia.
