Jams, Jellies, Marmalades, Preserves, and Candied Products
摘要
Fresh fruits, owing to their short shelf life, are often processed into various value-added products to enhance their availability throughout the year and stabilize prices during glut seasons. The processing of fruits and vegetables not only minimizes post-harvest losses but also offers significant opportunities for value addition and waste utilization, thereby contributing to increased income and employment generation in agrarian economies. Processed fruit products hold substantial potential for both domestic and international markets. Among these, products such as jams, jellies, marmalades, and candied fruits are widely popular due to their natural sweetness, nutritional value, and health-promoting properties. These preserved products not only extend the usability of fruits but also add flavor and variety to everyday diets. The quality of these products depends greatly on the careful balance of primary ingredients, namely fruit, sugar, pectin, and acid. The production of jams, jellies, and marmalades is one of the oldest and most effective methods of fruit preservation, primarily through increasing soluble solids content to enhance shelf stability. In recent years, advancements in processing technologies such as non-thermal methods, development of calorie-reduced formulations, and microencapsulation of bioactive compounds have further improved the nutritional profile, safety, and functional properties of these products
