Courses in mathematics are required in many colleges in the United States as part of what is termed General Education. This paper describes an origami “gen-ed” math course; formal and informal objectives; specific models; math content, including topics of mini lectures in geometry, algebra, and number theory, and peeks given to advanced topics; and assignments. The class did move online for the pandemic, and changes before and after are described. Lastly, outcomes are presented, including the publication of two books. The conclusion describes certain ambivalences felt by the author and how she resolves them.
