This chapter presents how artificial Intelligence (AI) can be integrated into the academic inquiry process in undergraduate tourism and hospitality teaching and learning environments in New Zealand polytechnic institutes. It analyses the experiences of tutors and students, examining how AI impacted student learning and engagement with the academic inquiry process. This chapter identifies key lessons learned and proposes a step-by-step approach to developing student’s AI literacy prior to integrating AI into the academic inquiry process. These insights aim to inform future teaching practices and enhance student engagement.
