Developing the Sabores Mineiros Route: A Framework for Gastronomic Tourism in Minas Gerais, Brazil

This paper presents the process of structuring a gastronomic route in the central-southern region of Minas Gerais, Brazil, focusing on the area’s rich culinary heritage. The study aims to explore how gastronomic tourism can be used to promote local economic development and cultural preservation. By analysing the territorial context, identifying key actors and mapping strategic routes, this work provides a comprehensive model for the implementation of a sustainable and culturally significant gastronomic route. The Sabores Mineiros Route includes artisanal producers of cheese, cachaça, coffee, olive oil and traditional sweets. The paper discusses the methodology used, the territorial scope and the potential impact on tourism and the local economy.
