The quest for sustainable and environmentally friendly alternatives in materials science and biotechnology has driven exploration into the rich diversity of natural resources globally. This chapter focuses on carboxymethylcellulose (CMC), a water-soluble cellulose derivative with significant applications in various industries due to its versatility and biodegradability. The selection of the cellulose source for CMC production plays a pivotal role in influencing its properties and applications. This study delves into the synthesis and diverse applications of CMC across multiple fields, with a specific focus on CMC derived from two distinctive plant species: Posidonia oceanica and Ziziphus lotus.
