Clitoria ternatea, also known as butterfly pea flower or bunga telang, is of particular interest due to its color and other bioactive compounds that offer significant health benefits. This study investigates the effects of various solvents, including water, acetone, methanol, ethanol, acid, and alkaline solutions on the extraction of phytochemical contents from C. ternatea flower. The efficacy of each solvent was evaluated by measuring the color, total anthocyanin content (TAC), and ternatin index (TI) of the extracts. The results indicate that solvents significantly influence the extraction efficiency and quality of the extracts. The color of the extracts varies based on the solvent type and pH used during extraction. Acidic solvents, particularly 70% acetic acid, yielded the highest TAC with value of 41.08 mg/L, while the lowest one was obtained with distilled water with value of 21.71 mg/L indicating superior extraction capabilities of the red color of the extracts. On the other hand, in general, alkaline water produced extracts with the highest TI, reflecting a prominent blue color. This study provides valuable insights into optimizing solvent selection for extracting beneficial compounds from C. ternatea, which could enhance its applications in various industries, including textile, food, and pharmaceuticals.
