Marine animals such as fish, crustaceans, and mollusks represent an important source of bioactive compounds, for example, peptides, carotenoids, chitosan, and omega (ω)-3 polyunsaturated fatty acids (ω-3 PUFAs) with potential applications in the food, pharmaceutical, and cosmetic industries. These bioactive compounds have important properties, including antioxidant, antihypertensive, anti-cancer, anti-diabetic, and anti-inflammatory. Therefore, studies on the extraction of these compounds using biotechnological processes have increased since they represent efficient processes and promise a more sustainable manufacturing industry. This chapter briefly describes the main marine animals as sources of bioactive compounds with biological properties and potential applications. In addition, recent studies on the biotechnological processes (enzymatic hydrolysis and microbial fermentation) used for the extraction and optimization of the yield of bioactive compounds are detailed here.
