Marine products contain several molecules such as carotenoids, polyunsaturated fatty acids, and phenolic compounds with potential applications in different industries; these molecules can be used in various areas of the industry. These molecules are distributed across many marine organisms with different concentrations. In this chapter, we discuss the sources, extraction methods, and biological significance of these compounds, highlighting their role in combating oxidative stress and inflammation and their potential therapeutic applications. Notably, these compounds can be used in the food, supplement, cosmeceutical, and nutraceutical industries.
